When I first started baking, quite a few years ago, I was especially determined to start baking the Japanese sweets of my anime dreams. Aside from traditional Japanese wagashi such as mochi, I did not have many options... the baking industry in Japan is saturated in eggs and milk ingredients! Thus began my determination to veganizing any and all recipes I could get my hands on. And despite some repeated failures (I see you, cute chunky roll cakes!), I prevailed, and my first achievement was these mushi pan, or Japanese steamed cakes.
